NEW POTATO CASSEROLE 
4 c. new potatoes (12 med. = 4 c.)
1 (8 oz.) container sm. curd cottage cheese
1 (8 oz.) container sour cream
2 tbsp. butter
1 c. sliced green onions
1 tbsp. parsley
1 clove garlic, minced
1/2 tsp. salt
1/2 c. shredded sharp Cheddar cheese

Boil unpeeled potatoes until tender. Cool and cube.

Mix cottage cheese and sour cream. Mix with sauteed onions. Add everything together, except Cheddar cheese.
