BEEF AND RICE CASSEROLE 
3 c. cooked rice
1-1/2 lb. ground beef
1 (16 oz.) can tomatoes
1 onion, chopped
1 pkg. taco seasoning
1 tsp. chili powder
1 (8 oz.) sour cream
1 (4 oz.) black olives, sliced
1 (7 oz.) mild green chiles
3 c. shredded cheddar cheese

Cook and drain ground beef. In a large bowl combine rice, meat, tomatoes, onion, spices and taco seasoning mix. In a small bowl combine sour cream, olives and green chiles. Use a 9 x 13 pan and layer 1/2 of the beef/rice mixture, 1/2 sour cream mix, and 1/2 cheese. Repeat.

Bake in 350°F oven for 45 minutes.
