ZUCCHINI COOKIES 
1 c. shortening
1 1/2 c. brown sugar
2 eggs
2/3 c. shredded zucchini
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. each cinnamon, ginger & nutmeg
1 c. uncooked oatmeal
1 c. uncooked wheat cereal
1 c. chopped almonds or walnuts
1/2 tsp. almond or black walnut flavoring

Cream shortening and brown sugar; add eggs, beat until fluffy. Stir in zucchini. Sift dry ingredients together and add to creamed mixture. Stir in oatmeal, cereal, nuts and flavoring.

Drop by spoonfuls onto greased cookie sheet. Bake in preheated oven at 375 degrees for 10-12 minutes. Makes about 6 dozen.
