THE INVISIBLE BANANA FRENCH
TOAST
 
2 eggs
1/3 tsp. cinnamon
4 tsp. butter or vegetable oil
1 banana
6 slices whole grain bread
Maple syrup or yogurt

Peel and cut up banana. Put eggs, banana and cinnamon in blender. Blend until smooth. Pour batter in bowl. Set aside. Heat oil or butter in pan over medium heat. Lift pan, making sure whole pan is greased. With fork, place 1 slice of bread in batter, turn bread over, making sure both sides of bread are covered with batter. Place bread in pan, brown on both sides, repeat with other slices. Serve with syrup or yogurt.
