BANANA FRENCH TOAST 
1 med. banana, mashed or pureed
2 eggs
1/3 c. lowfat or skim milk
1/4 tsp. ground mace
6 slices bread, each slice cut in half
1 tbsp. vegetable oil
1 tbsp. butter

Beat the banana and the eggs together in a bowl. Stir in the milk and the mace. Dip the bread slices into the banana mixture in a non-stick skillet over medium heat. When the butter begins to foam, place the bread in the pan. Cook the French toast until it is well browned on both sides, about 2 minutes per side. Serve the French toast hot, accompanied by syrup and sliced fruit. Serves 4.
