DEEP - FRIED VEGETABLES
CROQUETTES
 
1 med. potato
1 med. carrot
1 sm. onion
2 eggs
3/4 c. flour
1/4 c. water

Cut vegetables into matchstick - size pieces. Make a batter of slightly beaten eggs, flour and water. Add vegetables and mix lightly. Drop by tablespoon into deep hot oil, turn once. When light golden brown, remove and drain. Serve warm with Soy sauce dip.
