BEEF BURGUNDY | |
3 lbs. beef, sirloin or round cut in 2 inch cubes 6 tbsp. butter 1 tsp. salt 1/2 tsp. black pepper 1 1/2 c. red wine 2 tsp. chopped garlic 3 tbsp. chopped shallots 2 tsp. diced tarragon 1 tsp. tomato paste 4 tsp. cornstarch 2 1/2 c. chicken broth 1 bouquet garni 12 sm. white onions 12 mushroom caps 2 tbsp. chopped parsley Brown beef in 4 tablespoons butter on high heat, add 3 tablespoons wine. Add remaining butter and loosen brown bits. Stir in garlic, shallots, cook 1 minute. Stir in tarragon, tomato. |
