POTATO ROLLS | |
1 pkg. dry yeast 1/2 c. hot mashed potatoes 1/4 c. sugar 1 c. scalded milk 4 1/2 - 5 c. all purpose sifted flour 1/4 c. water 1/4 c. shortening 1 1/2 tsp. salt 1 egg Soften yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm. Add softened yeast and egg. Stir in 2 cups flour, beat well. Stir in remaining flour, or enough to make soft dough. Knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes. Place in lightly greased bowl, turning over to grease surface. Cover, let double (1 hour) in warm place. Punch down. Shape into balls. Cover, let rise 10 minutes. Shape into rolls. Place on greased cookie sheet. Let rise until almost double, about 1 hour. Bake at 400 degrees for 10 to 12 minutes. |
