BROCCOLI AND RICE CASSEROLE 
1 sm. box Velveeta cheese, chopped into pieces
1 pkg. frozen chopped broccoli
1 sm. onion, chopped fine
2 tbsp. butter
1 c. rice, uncooked
1 (8 oz.) can cream of celery soup
1/2 c. water

Cook rice and broccoli as directed on packages. In large frying pan - saute onions. Add soup, water, and butter Bring to a boil. Remove from heat. Stir in chopped pieces of Velveeta cheese until all cheese is nearly melted. Place rice and broccoli in a 9 x 13 inch pan and add other ingredients. Blend together. Bake uncovered for 30-40 minutes at 350 degrees.
