BRAN MUFFINS | |
1 1/4 c. regular all-purpose flour 3 tsp. baking powder 1/2 tsp. salt 1/2 c. sugar 2 1/2 c. Kellog's 40% Bran Flakes 1 1/4 c. milk 1 egg 1/3 c. soft shortening or oil Stir together flour, baking powder, salt and sugar. Set aside. Measure Bran Flakes and milk into mixing bowl. Stir. Let stand 1 to 2 minutes. Add egg and shortening. Beat well. Add dry ingredients to cereal mixture, stirring only until completely combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups. Bake in oven at 400 degrees about 25 minutes or until golden brown. Serve warm. |
