CHINESE SPINACH | |
3 tbsp. oil 1 tbsp. soy sauce 1 tsp. lime juice 1/2 tsp. sugar 1/8 tsp. pepper 1 clove garlic, minced 1/2 c. diagonally sliced green onion, 1" slices 12 oz. fresh spinach, trimmed, washed & torn into bite-size pieces 1/4 c. sliced water chestnuts 1 (2 oz.) jar sliced pimiento, drained Heat oil, soy sauce, lime juice, sugar and pepper in large skillet. Add garlic. Stir-fry over medium-high heat about one minute or until garlic is light brown. Add onion. Stir-fry one minute. Add spinach, water chestnuts and pimiento. Stir-fry 2 to 3 minutes longer, or until spinach is tender. 4 to 6 servings. |
