SPINACH SALAD WITH BACON
DRESSING
 
BACON DRESSING (Makes 1 cup) :

1/4 c. wine vinegar
1/2 c. vegetable oil
2 tsp. Dijon mustard
2 tsp. brown sugar
1 tsp. salt
Few drops of Tabasco
4 slices crisp-cooked bacon, crumbled
2 tbsp. sliced green scallions

Whisk first 6 ingredients until thoroughly blended. Stir in bacon and scallions; cover and chill several hours or overnight. Mix thoroughly before serving over greens. Especially good over washed, trimmed spinach leaves and mashed hard-boiled egg, sliced mushrooms and croutons, sprinkled over spinach.
