SPINACH SALAD WITH HOT BACON
DRESSING
 
Sm. bowl freshly washed, pat dry spinach leaves
1/2 c. water chestnuts
1 c. bacon, chopped
2/3 c. bacon grease
1/2 c. red wine vinegar
1 tbsp. sugar
1/3 c. chopped walnuts

In large saucepan at medium heat, add bacon and grease, vinegar, and sugar. Heat for 2-3 minutes until sugar dissolved. Add water chestnuts and walnuts; mix.

Pour spinach into pan; toss pan 30 seconds. Remove pan from heat; turn it over and pour spinach and dressing into bowl. Cover bowl with pan 20 seconds. Remove pan; toss and serve hot.
