HEALTHY RICOTTA PIZZA 
1 pound whole wheat dough (see other recipe)
1 pint no fat ricotta
1 med onion, diced
5 - 6 cloves garlic, minced
6 - 7 mushrooms, chopped
1 large crown broccoli, chopped
1 handful fresh spinach, chopped
½ green pepper, diced
2-3 tbsp. Parmesan cheese
¼ cup feta cheese
1 cup Monterey Jack, shredded
1 tsp. Italian herb mix
salt and pepper
hot paprika
olive oil

Heat 1- 2 teaspoon olive oil in pan. Sauté onion, garlic and mushrooms till moisture is gone. Cool in a bowl while rolling dough onto pizza pan. Mix in Ricotta, Parmesan cheese, Italian herbs and salt and pepper. Saute broccoli, green peppers (in same pan) till soft. Brush dough lightly with olive oil.

Spread ricotta mixture evenly over dough. Top with broccoli mixture. Continue topping with Feta, Spinach and Monterey Jack. Sprinkle hot paprika and bake at 450°F for 20-25 minutes.
