PAUL SMITH CHEESE CAKE 
CRUST:

1 c. graham cracker crumbs
3 tbsp. sugar
3 tbsp. melted butter

CAKE:

3 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 tbsp. lemon juice
3 eggs

TOPPING:

1 c. sour cream
2 tbsp. sugar
1 tsp. vanilla

Combine crumbs, sugar and butter. Press onto bottom of 9" springform pan. Bake at 325 degrees for 10 minutes. Reduce temperature to 300 degrees. Combine softened cream cheese, sugar, lemon juice; mix until creamy. Add eggs, one at a time. Pour over crust. Bake 300 degrees for 55 minutes. Combine sour cream, sugar and vanilla. Carefully spread over cheese cake. Bake 10 minutes. If desired, when cool, top with raspberries or strawberries.
