OVEN - FRIED VEGETABLES 
1/2 c. bread crumbs
Pam olive oil cooking spray
1/8 c. Parmesan cheese
1 egg
1 tbsp. water
2 sm. zucchini
1/2 c. cauliflower florets
1 c. broccoli florets
4 cherry tomatoes

Combine egg and water; beat. On separate dish combine bread crumbs and Parmesan cheese. Slice zucchini into quarter strips and then 2-inch long pieces. Dip zucchini pieces and cauliflower-broccoli florets into beaten egg, then roll in bread crumbs.

Place on tin foil lined cooking tray. Spray each piece generously with Pam olive oil spray. Bake 20-25 minutes at 375 degrees. Serve with your favorite dips. Serves 4. Garnish with whole cherry tomatoes.
