OVEN FRIED ZUCCHINI 
3 tbsp. cracker crumbs (finely crushed)
2 tbsp. grated Parmesan cheese
1/4 tsp. garlic salt
1/4 tsp. pepper
3 med. sized unpeeled zucchini
2 tsp. vegetable (or olive) oil
2 tbsp. water

Preheat oven to 450 degrees. Spray cookie sheet well with cooking spray. Combine first 4 items in large plastic bag (for shaking) set aside. Cut zucchini into quarters lengthwise, then cut across into halves or thirds. Also place these in large plastic bag and add oil and water. Zip bag and shake so spears are coated with oil/water mix. Remove a few at a time and place in other plastic bag of crumbly cheese, etc. Shake until coated, then place in rows on cookie sheet in a single layer. Bake uncovered for 7 minutes, or until spears are browned and tender-crunchy. Serve immediately.
