MEXICAN CORNBREAD 
2 c. cornmeal
1/2 c. flour
1 heaping tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1/4 c. oil
1/2 c. milk
2 eggs
1 can whole kernel or cream style corn
1 c. chopped onion
1 c. chopped hot peppers
2 c. grated cheese

Combine all ingredients except 1 cup shredded cheese. Sprinkle on top before baking.
