The end result is a "conversation piece" - very moist and full of flavor. Most people have never heard of cucumber being used in this way. I coarsley grated the cucumber and squeezed as much water out as possible.

I make this a lot! Delicious, light, flavorful. I experimented with adding Blueberries in the batter and rock sugar on top. Wonderful!! Becoming a fast favorite of many. Flies off the bake sale tables! Now I'm trying to figure out how to make cucumber cookies.?

I made this with applesauce (no oil), Truvia for sugar and egg whites only. Delicious. What a great way to use cucumbers. I highly recommend it.
