CHEESE, BACON AND TOMATO PIE 
Pastry for 9 inch one-crust pie
1/2 c. chopped onion
2 tbsp. all-purpose flour
1 thinly sliced med. tomato
8 slices bacon, crisply fried and crumbled
2 c. shredded Mozzarella cheese (8 oz.)
2 c. shredded lettuce

Mix onion and flour; sprinkle in pastry-lined pie plate. Top with tomato slices; sprinkle with bacon and cheese. Cook immediately or cover and refrigerate no longer than 24 hours. Bake in 400 degree oven until cheese is melted, about 25 minutes. Sprinkle with lettuce. Serves 6.
