BLUEBERRY ORANGE BREAD | |
3 c. white flour 3 1/2 tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt 1/2 c. sugar 1 c. blueberries, preferably fresh 1 egg 1 c. milk 1/3 c. orange juice 1 tbsp. grated orange rind 1/2 c. oil In a large bowl mix the dry ingredients together thoroughly. Toss in the blueberries and with your hands stir them around to coat them with flour. In another bowl beat the egg lightly, then add the remaining ingredients. Combine this liquid with the flour mixture, stirring just enough to moisten all the dry ingredients. Turn into a well-greased 9 or 10 inch bread pan and bake in a preheated 350 degree oven for 1 hour and 10 minutes. Cool in the pan for 5 minutes, then turn out onto a rack to cool thoroughly before slicing. |
