ORANGE-BLUEBERRY BREAD 
1 c. blueberries
2 c. sifted unbleached flour
1/2 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. chopped walnuts
1 tsp. grated orange rind
1 egg
3/4 c. orange juice
2 tbsp. vegetable oil

Sprinkle the blueberries with a bit of the flour and toss lightly. Sift together the remaining flour, sugar, baking powder, salt and baking soda. Stir in the blueberries, nuts, orange rind. Set aside.

Combine egg, orange juice and oil. Add the flour-fruit mixture. Stir just until moistened Pour into a greased 5 x 9 inch loaf pan. Bake at 350 degrees for 50 minutes. Cool for 10 minutes.
