EGGS & CHEESE BREAKFAST BAKE 
5 eggs
1/2 c. cottage cheese
8 oz. hash brown potatoes
1/2 lb. shredded Monterey Jack, Swiss or Mozzarella cheese (your choice)
2 green onions, chopped
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. hot pepper sauce

Beat eggs, add cottage cheese, shredded cheese, onions, salt, pepper and hot pepper sauce. Fold in hash brown potatoes. Pour into greased casserole dish. Bake at 350 degrees 40 minutes. This recipe can be prepared the evening before and refrigerated overnight. Bake in the morning. 6 servings.
