CHOCOLATE PEPPERMINT MERINGUES 
2 egg whites, room temperature
1/8 tsp. salt
1/8 tsp. cream of tartar
3/4 c. sugar
1/2 tsp. vanilla
1 c. mini chocolate bits
1 c. chopped pecans or walnuts
3-4 tbsp. crushed peppermint candy

Preheat oven to 250 degrees. Whip egg whites until foamy. Add salt and cream of tartar. Beat to form soft peaks. Add sugar 1 tablespoon at a time, beating after each addition. Meringue will be stiff and shiny. Fold in vanilla, nuts and chocolate.
