BLACKBERRY DEEP DISH PIE 
Pastry for single-crust pie
1 qt. fresh blackberries
3/4 c. sugar
2 1/2 tbsp. quick cooking tapioca
1/4 tsp. salt
1 tbsp. butter

Combine blackberries, sugar, tapioca and salt. Pour into an 8 inch square baking dish. Dot with butter. Let stand 15 minutes. Roll pastry 1/8 inch thick (to fit top of baking dish). Cut several slits in center. Place on top of filling. Bake at 425 degrees for 25 minutes. Serve warm.
