CHICKEN SALAD POLYNESIAN 
1 qt. chicken or turkey, coarsely cut (3 whole chicken breasts)
1 can sliced water chestnuts
1 lb. seedless green grapes
1 c. celery, sliced
1 c. slivered almonds, toasted
1 1/2 tsp. curry powder
1 tbsp. lemon juice
1 tbsp. soy sauce
3/4 c. mayonnaise
3/4 c. plain yogurt
1 med. can pineapple chunks, drained

Cook and cut up chicken. Slice water chestnuts and add to chicken. Add grapes, celery and almonds. Mix mayonnaise, yogurt, curry powder, soy sauce and lemon juice. Combine with chicken mixture and chill several hours.

May be served on lettuce leaves and garnish with pineapple chunks and slivered almonds. Serves 5 as a main dish, 10 as a side dish.
