MOLASSES - GINGER COOKIES 
1 c. shortening
2/3 c. dark molasses
1/3 c. brown sugar
2 tsp. baking soda
1 tsp. ginger
1 tsp. salt
3 c. flour

Blend all dry ingredients. Cut in shortening. Add dark molasses and blend mixture together. Knead and form a long roll approximately 1 1/2 inches in diameter. Cover with wax paper and store in refrigerator. As needed, slice 1/4 inch thin and place on greased cookie sheet and bake 8 minutes in a 350 degree oven. 6 to 7 dozen.

NOTE: Can roll small amount in hand and place on cookie sheet. Press down with fork dipped in granulated sugar. Bake.
