PERFECT ROAST BEEF 
Preheat oven to 375 degrees. Salt and pepper roast which should be at room temperature and place on rack in shallow pan, put in oven and bake for 1 hour. Turn off oven and DO NOT OPEN OVEN DOOR! Allow three hours for oven door to complete cooking. Longer does not matter. About 20 minutes before you want dinner, turn oven on 300 degrees to warm up roast. While it is warming, finish rest of meal.

Works with any size from 4 pounds sirloin tip to 10 pound rolled cross rib. Seems to tenderize tougher cuts like a boneless rolled chuck roast. For frozen roast, cook for 1 1/2 hours before turning off oven. We slice meat before warming it in juices, usually doesn't even get warmed up.
