PERFECT ROAST BEEF 
Back of the rump roast, 3 to 4 lb. at room temperature
Salt and pepper

Preheat oven to 500 degrees. Place seasoned roast in pan with rack. Cook in oven for 5 minutes per pound for rare to medium or 5 1/2 to 6 minutes per pound for medium to well done. Turn OFF heat and leave door CLOSED for 2 hours. Do NOT open door before the time is completed.

in my oven 6 min per pound for rare at 5 min per pound center still cold but easy and great taste. I add slivered garlic in the roast
