THE PERFECT ROAST 
4 to 6 lb. top round roast
3 to 4 cloves garlic, peel and cut into slivers
Coarse black pepper

Preheat oven to 500 degrees. With sharp knife, make deep cuts all over roast. Insert garlic slivers so they disappear into meat. Sprinkle meat with pepper. Place into roasting pan, fat side up. Roast meat for 7 minutes per pound (for medium rare). Turn oven off. Leave roast in oven for 2 hours more. Do not open oven door. Roast will be brown and crisp outside and pink throughout. Serve warm or chill and cut into thin slices.

I did this minus the garlic cloves (I didn't have any). Instead I used onion powder, garlic powder, and Worcestershire on it. The cooking method was PERFECT!!! Even my picky kids ate this! Wonderful! I WILL do this again. Thank you for the recipe. :)
