PERFECT ROAST BEEF EVERYTIME 
3 to 5 lb. roast
Flour
Salt
Pepper

Electr ic oven. Preheat oven to 500 degrees. Season roast with salt and pepper. Rub roast well with flour. Place roast in shallow open roasting pan. Place a tent of aluminum foil loosely over roast to protect oven from splattered fat.

Roast 5 minutes per pound for rare, 6 minutes for medium, and 8 minutes for well done. When time is up, turn off oven heat. Do not open oven door until oven gets cool. At least 2 hours.

GRAVY:

1 1/2 c. water
1 tbsp. cornstarch
1 c. chopped mushrooms

Mix with pan drippings from roast. Bring to boil. Serve with roast.

I've been using this recipe for years and it works every time. Instead of 5 1/2 minutes for medium-rare, I multiply the weight of the roast time 3 and that equals the time I leave it in at 500°F. It all depends on how tight (new) your oven is and what cut of beef you use. I always use a nice rump roast. Great flavor.
