BEEF ALA NORMANDY 
2 lb. lean sirloin or tenderloin, cut 1/4 inch thick in 2 inch strips
8 oz. fresh mushrooms, sliced
10 1/2 oz. can chicken broth
1/2 c. sherry
1/4 lb. butter
1/2 c. tomato juice
1 lg. onion, sliced
1/8 tsp. salt
1/8 tsp. pepper
Flour
Rice

Dip strips of beef in flour. Fry in melted butter for 5 minutes. Remove to 10x10 inch baking dish. Fry onions in same butter until slightly cooked. Add remaining ingredients. Bake, uncovered at 375 degrees for at least 45 minutes. (Can be cooked for as long as 1 1/2 hours.) Serve over rice. Serves 6.
