1 (3 oz.) pkg. lime flavored Jello
1 pt. vanilla ice cream
1/2 tsp. peppermint extract
1/4 c. chocolate chips
Cool Whip

Dissolve Jello in 1 cup boiling water. Add vanilla ice cream by spoonfuls. Stir until melted. Add peppermint extract and chocolate chips. Spoon into individual serving dishes. Chill until set, about 45 minutes. Garnish with Cool Whip and additional chocolate chips.
