GERMAN PANCAKES 
3 eggs
3/4 c. cold milk
3/4 c. flour
1/2 tsp. salt

Preheat oven to 450 degrees. Mix ingredients. Melt 3 tablespoons butter in cast iron pan or enameled cookware. Pour mixture into pan. With the skillet already hot, bake at 450 degrees for 15 minutes, then reduce heat to 300 degrees for 10 additional minutes. Cut up and serve with lemon juice, powdered sugar or maple syrup.
