AUNT MICKEY'S ROLLS 
2 c. milk
1 c. butter
1 c. sugar
2 tsp. salt
3 pkgs. yeast
2 eggs
10 c. flour

1. Scald milk. Add butter, sugar and salt and cool to lukewarm.

2. Dissolve yeast in 1 cup warm water.

3. In large bowl beat eggs slightly.

4. Add all ingredients to eggs (be sure they are lukewarm first).

5. Add 6 cups flour and beat until smooth. Add 3 more cups flour. Mix in 1 more cup flour.

6. Place dough in large, lightly greased bowl and cover with damp towel. Place in warm spot and let rise until double (1 to 1 1/2 hours).

7. When doubled, punch down and knead slightly.

8. Let rise again (3/4 to 1 hour).

9. Remove from bowl and place on lightly floured board. Knead 15 to 20 times.

10. Shape into rolls and place in greased muffin tins or pans. Let rise until double.

11. Bake in preheated oven at 375 degrees for 15 minutes or until browned. Yield: 50 or more.

12. For "brown and serve" rolls, bake at 275 degrees for 25 minutes until barely colored; cool, then freeze. To serve, thaw at room temperature and bake at 350 degrees for 10 to 15 minutes.
