PEPPER STEAK WITH RICE 
3 c. hot, cooked rice
1 lb. lean beef round steak, cut 1/2" thick
1 tbsp. paprika
2 tbsp. butter
1 clove garlic, crushed
1 c. sliced onions
2 green peppers, sliced
2 tbsp. cornstarch
1/4 c. each water & soy sauce
1 (8 oz.) can tomato sauce

While rice is cooking, cut steak into 1/4" wide strips. Sprinkle meat with paprika and allow to stand. Using a large skillet, brown meat in butter. Add garlic, cover and simmer 30 minutes. Stir in onions and green peppers. Cover and cook 5 minutes more. Blend cornstarch, water and soy sauce, stir into meat mixture. Cook until thickened, add tomato sauce and stir gently. Serve over fluffy rice.
