BROCCOLI CASSEROLE 
2 pkgs. frozen, chopped broccoli or spinach (20 oz. total) - good with broccoli and spinach combined
1/2 to 3/4 c. mayonnaise
1 can cream of mushroom or cream of chicken soup
2 eggs, beaten
1 sm. onion, chopped fine
1 c. Cheddar cheese, shredded
Croutons or bread crumbs for topping

Thaw frozen broccoli. In large bowl, mix all ingredients, except croutons. Place mixture in buttered 9 x 13 inch pan. Sprinkle top with croutons or bread crumbs. Dot with butter. Bake at 350 degrees for 30 minutes. If fresh broccoli is used, steam first to par cook.
