ZUCCHINI RELISH | |
10 c. zucchini, finely chopped 2 lg. onions 4 tbsp. salt 2 c. cider vinegar 3 1/2 c. brown sugar 1 each red & green pepper 1 tsp. turmeric 1/2 tsp. black pepper Combine chopped or coarsely grated zucchini, onion and salt and let stand for 5 hours in a cool place. Drain and rinse well. Add other ingredients with zucchini and onions in a large pot and bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Pour into sterilized jars and seal. |
