ZUCCHINI RELISH 
3 green peppers
1 red pepper
10 c. ground zucchini
4 c. ground onion
5 tbsp. salt
2 1/2 c. white vinegar
4 1/2 c. sugar
1 tbsp. dry mustard
1 tbsp. turmeric
1 tsp. cornstarch
2 tsp. celery seed
1/2 tsp. black pepper

Put zucchini, onions, salt in kettle and soak overnight. Drain, rinse, drain again. Put in large kettle, add rest of ingredients, bring to boil. Simmer for 30 minutes. Stir often. Put into jars, process for 5 minutes, also can be frozen.
