ZUCCHINI APPLESAUCE 
4 c. zucchini puree (see below)
4 tbsp. vinegar
1 tsp. lemon juice
2 c. sugar
1 tsp. cinnamon
Dash allspice and cloves (optional)

Peel, seed and coarsely chop zucchini. Put in blender with vinegar and blend smooth. Pour into saucepan with remaining ingredients. Stir well. Cook over low heat, stirring occasionally, until desired thickness. Cool and keep refrigerated.
