MINT CHOCOLATE MERINGUE BARS 
1 1/2 c. flour
1/2 c. sugar
3/4 c. butter, softened
2 eggs, separated
2 tsp. vanilla
1 c. chopped pecans or walnuts

Preheat oven to 325 degrees. Combine flour, sugar, butter, egg yolks and vanilla. Beat at low speed until crumbly, about 1 or 2 minutes. Press into greased pan size 13x9x2 inches.

Beat egg whites until soft peaks form, about 1 or 2 minutes. Fold in chopped nuts and spread over crust. Bake for 30 minutes or until golden brown. Cool completely, then cut into bars before serving.
