MOLDED GREEN SALAD 
1 env. unflavored gelatin
1 tsp. salt
3 tbsp. vinegar
1/4 c. chopped green onion
1 c. chopped celery
1 tbsp. sugar
1 3/4 c. water, divided
1 tbsp. lemon juice
2 c. shredded raw spinach
1 c. coarsely grated carrots

Combine gelatin, sugar and salt in saucepan - add 3/4 cup water, place over low heat, stirring constantly until gelatin is dissolved. Remove from heat. Stir in remaining water, vinegar and lemon juice. Chill mixture to unbeaten egg white consistency. Fold in remaining ingredients - turn into 1 quart mold or 7 individual molds - chill until firm. Yield: 7 servings - each serving 36 calories.
