MOM'S POTATO STUFFING 
5 lb. potato
Onion
1 egg
Salt
Pepper
Bell seasoning
Linguisa

Peel and cut potatoes. Boil in salted water until soft. Drain water. Add finely chopped onion to potatoes and hand mash. Allow to cool. When cool, add a beaten egg, salt, pepper and Bell's Seasoning to taste. Cut and cook linguisa, don't drain. Add linguisa and juice to mash potatoes. Mix well and stuff into bird.

The stuffing may be cooked separately in glass baking dish at 350 degrees for 30 minutes. (Note: 1 egg per five pounds of potatoes.)
