SUMMER SAUSAGE 
4 lb. chuck roast

Ask butcher to run it through grinder only once. 1 tsp. onion powder (not salt) 1/2 tsp. ground black pepper 1 tsp. garlic powder (not salt) 4 tbsp. Morton's Tender Quick Salt 2 c. water

Mix together. Shape into 3 long rolls to fit in large roaster. Wrap each roll in heavy foil; refrigerate for 24 hours. Leave rolls wrapped. Simmer in water to cover, 1 1/2 hours. Unwrap. Drain off any grease. Cool. Wrap in new foil. Keeps well. Can be frozen.
