CHICKEN NACHO SOUP | |
2 c. cooked, diced chicken 6 c. chicken broth (or use bouillon) 1 1/2 c. long grain rice 1 env. dry onion soup mix 1 tsp. salt 1 c. chopped celery 1/4 c. chopped green pepper Dorito type chips Shredded cheddar cheese Cook chicken, save broth. Add additional water if necessary to make 6 cups broth. Add bouillon to taste. Add raw rice, seasonings and vegetables. Cook over medium heat until rice and vegetables are tender (about 20 minutes). Add more liquid as needed. Place a handful of Dorito type chips in individual bowls. Top with some shredded cheese. Cover with hot soup. Serve immediately. |
