PIZZA POTATOES 
1 pkg. scalloped potatoes mix
1 can (16 oz.) tomatoes
1 1/2 c. water
1 pkg. (4 oz.) Mozzarella cheese
1/4 tsp. oregano
1 pkg. (4 oz.) sliced pepperoni

Heat tomatoes, water and oregano in a 2 quart casserole. Boil. Add potato slices and sauce mix to tomato mixture. Stir until sauce mix is completely dissolved. Arrange pepperoni over the potatoes and sprinkle cheese over pepperoni. Bake uncovered at 350 degrees for 30 to 35 minutes. Instead of pepperoni, you may use hamburger, Italian sausage or any combination you desire. You may also use mushrooms or olives, etc. The choice is up to you.
