RICE PUDDING 
4 c. milk
1 c. sugar
5 eggs
3 tsp. vanilla
2 tbsp. cornstarch
1/4 c. milk
1 c. uncooked rice

Beat 2 whole eggs and 3 yolks, well. (Reserve 3 of egg whites for meringue.) Add sugar and milk with eggs, mix well. Pour into non- stick saucepan and heat to almost boiling point, stirring constantly.

Mix remaining 1/4 cup milk with cornstarch, stir into sauce mix. Continue stirring constantly until mixture comes to full boil. Cook about 2 minutes. Pour sauce into casserole, add vanilla, stir well. Stir in rice.

Beat remaining egg whites until hold in stiff peaks. Add 1/3 cup sugar, beat again at high speed 2 minutes. Spread over pudding. Put in 350 degree oven on broil until brown. Watch carefully so it won't burn.
