DANISH RICE PUDDING 
1 c. rice
4 c. milk
8 tbsp. sugar
1/2 tsp. salt
1 1/2 to 2 env. gelatin
2 c. whipped cream, approximately
2 tsp. vanilla

Cook rice in milk over low heat until rice is tender and milk is absorbed. Add sugar, salt and dissolved gelatin. Cool. Add whipped cream and vanilla.

Put in a large bowl and chill until fairly firm. Serve with cold fruit sauce. (Danish dessert pudding mix makes an excellent sauce.) Or make your own from frozen fruit. Sprinkle with nuts and cinnamon.
