MAKE AHEAD BRUNCH 
10 slices white bread, buttered and cubed
1 to 1 1/2 lbs. Cheddar cheese, grated
8 eggs
3/4 tsp. salt
3/4 tsp. dry mustard
3 c. milk
Bunch green onions, chopped
2 lbs. fresh spicy (or 1/2 spicy) pork sausage
1 lb. fresh mushrooms, sliced

Saute sausage, drain. Beat eggs and milk and add all spices. In 9x13 casserole (or 2 smaller ones) layer bread cubes, sausage, cheese, onions and mushrooms. Pour milk and eggs and spices over all. Bake approximately 50 minutes covered; uncover last 5 minutes to brown. 350. Serves 8-12. (Refrigerate overnight before baking.)
