SHRIMP STOCK 
QUICK SHRIMP STOCK:

1 lb. raw shrimp
1 c. water
1/2 tsp. salt

Chopped heads and shells

Mix all ingredients, then strain, squeezing out all liquid. Discard the shells and reserve the liquid.

COOKED SHRIMP STOCK #1:
1 lb. raw shrimp
3 c. water
1 1/2 tsp. salt
1 1/2 tsp. sugar

Chopped heads and shells

Combine all ingredients in a saucepan. Cover and bring to a boil. Reduce heat and simmer for 15 minutes. Let cool, then strain, pressing all liquid from the shells. Discard the shells and reserve the shrimp stock.

COOKED SHRIMP STOCK #2:

Cook whole, washed, raw shrimp in boiling, salted water. Remove the shrimp; strain and reserve the cooking liquid for shrimp stock.
